Most advice is to only freeze meat for only 3-6 months but that is just because it dries out over long periods in the freezer. So long as it's dealt with correctly before freezing and then kept fully frozen, it could be safely eaten after years in a freezer.

We tend to have about 12-18 months of pork stock in the freezer (field to freezer is c.100 metres!) so the pork we eat has normally been frozen for around that length of time.

Nearly all the pork we have is rolled joints (neither me or SWMBO are that accomplished in butchery) and they go straight from freezer to slow cooker, cooked normally in apple juice with onions, for around 18 hours.

SWMBO makes all manner of regular meat dishes (curries, chilli, fajitas, etc) with the meat once it is cooked safely in the slow cooker.

That and bacon on a Sat morning and Roast Sun afternoon is pretty much our meat consumption other than when we are doing the slaughter (really, really fresh liver and heart) and butchering when we'll have a bit of a rib-fest.

I’ve also got a freezer full of pork, though not quite as close. It comes from a farm about 10 miles away.

And here's me thinking £8.80 was a bit much for cod, chips and peas after they raised the price by a pound about a month ago in Manchester.

Our local (Ivybridge) £8.20 for regular cod & chips, I'd rather have Haddock, but they insist on leaving the skin on is a reasonable price given todays market. However, I'd swear it's no longer fresh (no more worms), it's frozen, & once upon a time was cooked the proper way in beef dripping & is now cooked in rapeseed.

I was once convinced that eating fish had caused a migraine. It turned out to be bad haddock.

Brill! I used to be a dab hand at this, but I'm beginning to flounder a bit now. It's usually about now when Ray, my chubby friend, tells me I'm talking pollocks.
