I have the same problem with my 08.5 hse. It was fine with my Nokia but now I have an iphone it has gone to last first.
The iphone has settings for sort order and display order but neither of these make any difference.
Very annoying  .

I put all the names in the surname field - i.e. first and last name otherwise it shows as surname then first name.
For the phone book transfer, it does it automatically, but nothing shows it happens. Takes maybe 30 secs or a minute for the phone book to be available in the car (can't recall quite how much as have drunk a v nice bottle of red wine).
