I thought the viscous fan ran electronically (not driven by a belt)? I’m willing to try anything but a belt change is quite an involved job as I understand it. Thanks

In theory the fan should not need to be running during motorway speeds as the air flow is sufficient, so the only extra load you are putting on the engine is the air con compressor, if this extra load causes the engine to overheat the fan will run, if the extra load causes the belt to slip the aircon will not be as efficient and the fan will also be running at a slower speed.
Another consideration is the oil temperature sensor, this runs in conjunction with the water temp sender and could cause the water temp gauge to fluctuate.
 It can when others can't,

It goes where others don't.

I assume this is a diesel.

Good shout on oil temp sensor

Auxiliary belt (the one you can see) is very easy. I think. Well if the fan wasn’t there is would be.

The fan is engine belt driven but can be electrically commanded to work harder
If you turn the AC on (by turning the eco button light off ) you really should hear the fan speed change. Worth trying. Maybe difficult to notice.
You should also hear it roar when you first pull away in the morning

Also check for engine fault codes. Or check fan control fuse. Fuse 10 under the bonnet.

As a reference I ran my D3 Diesel in the USA at + 40C in California , aircon on Auto. all the time and Viscous fan didn't cut in at all when driving , only when first starting up in a morning as usual . My own view this is not a fan problem. As a comparison a LR3 V8 petrol I had as a loan car while some work was being done on mine , the Viscous fan cut in every time I stopped a set of traffic lights. at similar temperatures. As soon as I was on the move again the fan stopped.
