Maybe being thick here but are all towing electrics live for charging without the ignition on? And secondly I have both towing sockets which is he best adapter to buy as I know some people only have the one?

Go and look at your towing electrics. It's not model year related, it's personal preference which determines which are fitted.
LR Genuine towing electric wiring are available for a single 13 pin connector:
Or twin 7 pin (aka 12N and 12S) connectors:
If you have the 13 pin connector (double check by opening the flap and counting the pins) - order the 13 pin adapter. If you have the twin 7 pin connectors, order the 12S connector.
There are, I believe, aftermarket towing electric wiring kits available with only a SINGLE 7 pin (12N) connector. This is NOT suitable for charging are there is no direct connection to the battery.06 D3 SE / 15 LR D90 XS SW / 88 LR 90 Td5 / 68 BMW 2000 ti

If you have the twin 7 pin connectors, order the 12S connector.

Short answer: yes, as your Defender has a 12S socket then it will also work for that.
Long answer: towing sockets are standardised. If a vehicle is fitted with a 13 pin socket or a 12S socket then it is suitable for charging the battery through that socket, using the correct adapter.06 D3 SE / 15 LR D90 XS SW / 88 LR 90 Td5 / 68 BMW 2000 ti

So in short and to clarify, on the two vehicles I have posted pics of sockets, they could both be charged via either white or black socket on each?

No. The white/grey plug (see shop picture) only fits the white/grey capped 12S socket.06 D3 SE / 15 LR D90 XS SW / 88 LR 90 Td5 / 68 BMW 2000 ti
