If it powered up through the number plate light, does that mean you left the lights on?.

No, nothing left on. Tony thought the locking system had gone out of sync because neither of the keys would work. Then when open and the key in the ignition system in sync again. Sounds plausible to me.
because if the lights weren't left on then it's strange the AA guy's plan worked ... and possibly links to some strange sh!t we've seen on CCTV.

Agreed, no lights on means no circuit to the battery which means no power to the car. Just thought it was a bit odd way of getting juice in there.

Perfectly logical as many systems in these vehicles have the switch on the negative side of the component so power is applied permanently. I found this in trying to take power for a dash cam from the overhead console.
So knowing that there is power to the lights even when off if is something to file away for the future.
Of course it should not have come to that - there door lock on the passenger side is there for a reason - maintain it and its door linkages.

Checking the wiring diagram for the number plate light, the lights are fed from Relay R125 and bounded by relay R274. Neither of those relays would have been pulled in. Even if they were, they are reliant on the lighting switch being either on "side lights" or "head lights".
The only thing I can think of is that side of R125 is fed into an input into the control module D162 in the CJB, and that might have clamping diodes that allow the voltage back to the 12V rail. That's a pretty common electronic protection feature.
